Aged Pecornino Toscano 1 lb
After being aged for over one year, the final result is a power-packed semi-hard cheese that tastes every bit its heritage – 100% Tuscan ewe’s milk and pure Tuscan olive oil. It has an herbaceous quality enhanced by a sweet, nutty sheepiness and a touch of sharpness. When brought completely to room temperature, it virtually glistens with butterfat and oil.

It’s canteloupe, no it’s a cannonball, no it's Mimolette. While its appearance may be somewhat deceiving with its hard crater like surface, cut into the dark orange flesh for a fairly hard and flakey cheese that makes a nutty, fruity tasting savoury appetizer.
Roquefort 1 lb
Roquefort has been fancied since the dark ages and referenced in literature since the 100th century. By the 1400’s, King Charles VI granted Roquefort, matured in the Combalou caves of Southern France, exclusivity of the use of the name. Today, Roquefort remains one of the world’s greatest blue cheeses. The taste is sharp and a bit salty and goes well with nuts and figs.
