Idiazabal enjoys a name controlled status as it was handcrafted for generations in Basque countryside. For centuries shephard's brought the Latxa sheep to graze high in the Pyrenees for its lush land. This cheese is hardwood smoked with hawthorne and cherry wood for an unmistakably deep orange rind that contains the nutty flavor. The texture is heavenly, smooth and buttery. Pair unique Idiazabal with a red Navarro wine and serve with red meat as is traditional done in the region.
